Chocolate Oreo Sandwich

Now I'm a big fan of cookies. I love practically any kind of cookies because cookies are like small little pieces of heaven ready for us to take a piece and enjoy. Chocolate is my favorite. Its bitterness and sweetness is so incredibly good. To top that off with a creamy cream filling is definitely like heaven. Those cream fillings are like the fluffy white clouds, but only more decadent and irresistibly tempting. As a child, I enjoyed eating cookies. Strange as it is, I love Oreo cookies not because of its cream filling, but because of its chocolate cookie sandwiches. Now this chocolate Oreo sandwich is an exception. Its combination of bittersweet chocolate and cocoa powder makes the use of cream filling a necessity. Without this cream filling, the cookie itself is missing the sweet and creamy punch. I hope you all would enjoy making and decorating your chocolate cookies!!

Ingredients:

1 cup and 2 tablespoon all purpose flour
1/3 cups cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 stick butter
1/2 cup brown sugar
1/2 cup sugar
1 egg
1/2 teaspoon vanilla
1 cup bittersweet chocolate chips

4 oz cream cheese
2 1/2 cups powdered sugar
1/2 teaspoon vanilla

Steps:

1. Whisk together the flour, baking powder, baking soda, and cocoa powder

2. In another bowl, beat the butter and sugars together until nice and fluffy.

3. Mix the egg and vanilla in the butter mixing.

4. Gradually add the flour mixing to the butter mixing.

5. Fold in the chocolate chips.

6. Make a scoop of cookie and use a spoon to press the cookie dough down on the cookie tray.
Bake for about 12- 14 minutes at 350 F.

7. Let the cookies cool down for about 10 minutes until making the cream filling.

8. Combine the cream cheese, powdered sugar, and vanilla until smooth.

9. Evenly spread the cream on the cookies and top with another cookie.

Tips and Notes:

* Optional: The cream filling can be spruce up by adding food coloring. You can use any color you want for any occasion. It is great to adjust to the holidays.

* Cream Filling: If you are not a big fan of the cream filling, you can easily substitute it with vanilla ice cream or your choice of any flavor ice cream. This will still create the same rich and sweet sensation.
